FERMENTATION

The fermenting room is the heart of the brewery, for it is here that biological changes occur and since a living organism is at work, the closest control is necessary to ensure the attainment of a uniform product.

In all operations during the brewing process, cleanliness is regarded as being of paramount importance. But, in the fermenting room, where the fermenting wort is so susceptible to contamination, cleanliness is not enough. Every endeavour is made to achieve absolute sterility throughout every phase of the operation. Fermenters, yeast buggies, utensils and all other equipment used in the fermenting room are scrupulously cleaned with an abundance of water and treated with dilute acids or chlorine compounds to achieve sterility. Further, the walls, floors and ceilings of the room are constructed of glazed tile and waterproof cement to ensure complete exclusion of any focal points for bacterial infection. Every worker in this stage of the process must be "sterility" conscious, as this is the only attitude which will produce a consistently uniform, superior quality beer.
