LAUTER TUN

This vessel is located on the brewhouse mezzanine and is constructed of stainless steel. It is circular, covered in, and fitted with a slotted, removable false bottom. The interior of the vessel is fitted with a set of knives or rakes which revolve about a central axis, thereby stirring the mash. The machinery is powered from below the vessel and can be revolved at varying speeds. The vessel is also fitted with a sparging device which permits the spraying of the grains with hot water later in the process.

The husks, being heavier, will settle to the bottom, forming a filter bed above the slotted plates. We can now filter the solution of maltose, dextrins, proteins and other products, which is now called "wort", to distinguish it from the fermenter product "beer". The wort filters down through the bed of husks, through the slots of the false bottom to the true bottom of the lauter tun. Here "run off" pipes lead the wort to the "grant", or collection and inspecting unit.
